Umisoba — Tokusei Shoyu Soba

This ramen shop is in my hometown, and I honestly think it’s the best ramen shop in the world. The broth, noodles, chashu, and egg — everything is absolutely perfect.The soup has a soy sauce base with a rich seafood flavor, served with thin noodles. The chashu is rare and tender, and the egg is soft-boiled, well-seasoned, and incredibly soft.

The owner does everything by himself, so it can take a little time for your ramen to be served, but it’s always worth the wait. I usually get the Shio, but this time I tried the Shoyu, and it was so good.
